A modern twist on the beloved ANZAC biscuit, ANZAC slice is a delicious and easy-to- make treat to commemorate ANZAC Day.
Ingredients:
    - ½ cup coconut
 
    - 75g butter melted
 
    - ½ cup condensed milk
 
    - 1 ¼ cups icing sugar
 
    - 2 tbs passionfruit pulp
 
    - 400g ANZAC biscuits
 
Method:
    - Finely crumb 400g ANZAC biscuits in a food processor or by hand in a zip-lock bag with a rolling pin.
 
    - Place the crumbs into a large bowl. Stir in the coconut, melted butter and ½  cup condensed milk. Mix well.
 
    - Press the mix firmly into a 20cm x 30cm slice tin.
 
    - Refrigerate slice until firm to touch.
 
    - Sift icing sugar into a bowl, then stir through passionfruit pulp to make a firm paste. Heat icing paste if required for easy spreading.
 
    - Spread icing over the slice. Return to fridge until the icing is set.
 
    - Cut slice into squares to serve.
